I have a few posts scheduled from some of the things I baked over the holidays lol. So when you see all these cakes and pies and stuff start popping up....this stuff is NOT recent lol. I LOVE scheduling a post lol.
I LOVE Keylime Pie, but Tony loves it even more than I do so when he asked me to make him one...of course I did ;-)
What you need:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup granulated sugar
- 4 tablespoons (1/2 stick butter) melted
- 2 (14-ounce) cans condensed milk
- 1 cup key lime or regular lime juice (I used key limes)
- 2 whole eggs
- 1 tablespoon lime zest
Preheat the oven to 375 degrees F.
In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove from the oven and allow to cool to room temperature before filling.
Lower the oven temperature to 325 degrees F.
In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.
Once chilled, sprinkle the lime zest as a garnish and serve chilled.
I made my own whip cream using heavy whipping cream, sugar and vanilla extract. I whipped it until I had the consistency I wanted.

i love key lime pie! I used to HATE lime anything until we lived in FL. I order my key lime juice straight from kermits in key west...its really hard to find good key limes here

I love almost anything that has a graham crust. I HAVE to try this even though it goes against the diet I am on supposedly. :) I must say that I love, love Cheesecake too, so if that happens to be one of the desert recipes you post, i'll have to pretend I don't see it. lol
