Oh yeah and my PC crashed..like DIED, or something. I have the dreaded Blue Screen of Death. I think I have talked my husband into a MAC desktop! I will fix the PC though, and let the kids play on it. Maybe I'll keep it WHO knows ! ALL of my stuff is on my external hard drive(and my external hard drive is backed up on a few disks AND online lol) so I will probably plug it up to my MAC to get my pics off, so hopefully pics I can show you guys some pics SOON!

Chicken Marsala
Serve-with ideas:
Buttery White Rice
PREP TIME:
10 minutes COOK TIME: 20
minutes READY IN: 30 minutes YIELDS: 4 servings
INGREDIENTS 4 boneless and skinless chicken breast 1/2 cup all-purpose flour 1 teaspoon Kosher salt 1/2 teaspoon freshly ground black pepper 1 teaspoon dried oregano
4 tablespoons olive oil 6 tablespoons butter, divided 1 cup sliced button mushrooms 1/2 cup Marsala wine 1/4 cup chicken broth
DIRECTIONS Place
chicken breast in between two pieces of parchment paper and pound
chicken breast to 1/4-inch thickness; set aside. Combine the flour,
salt, pepper, and oregano in a shallow bowl. Heat the olive oil and 4
tablespoons of butter together in a large skillet over medium heat.
Dredge the chicken in the seasoned flour, shaking off any excess flour
and carefully place the chicken in the skillet. Cook, flipping once,
until lightly browned on both sides, about 2 minutes per side and
transfer to a plate.
Next, add the mushrooms to the pan and cook, stirring
frequently, until the mushrooms begin to brown. Turn the flame
completely off and add the Marsala wine. Turn the flame back on to
medium and bring the wine to a boil, scraping the bottom of the pan
with a wooden spoon to remove any browned bits. When the wine has
reduced by half, add the chicken stock and continue cooking until the
sauce has thickened slightly, about 4 minutes.
Lower the heat to medium-low and return the chicken to the
pan. Continue to cook until the chicken is cooked throughout and the
sauce has thickened, about 7 to 8 minutes. Stir in the remaining 2
tablespoons of butter and season to taste with additional salt and
pepper. Serve immediately over rice or your favorite pasta. |
